Ingrediants:
1 lb. ground beef
1/2 cup bread crumbs
small onion, diced
4 oz. mushrooms, finely diced
1 egg
1/2 cup milk
2 tsp. worcestershire
1/2 tsp basil
1/4 tsp salt
1/2 tsp pepper
Sauce:
1/2 cup ketchup
2 Tbsp. brown sugar
1 tsp. dried ground mustard
Preheat oven to 375 degrees. Take a muffin pan that holds 12 and spray with nonstick cooking spray.
Combine all ingrediants in a bowl. Form the mixture into individual mounds and fill 8 of the 12 spots on the muffin tray.
Bake for 25 minutes.
While the meat loafes are cooking combine the ingrediants for the sauce. When the meat loafes are done top each with the sauce and bake for another 5 minutes.

Tips:
*For a healthier option try ground turkey
*In place of the sauce mixture try barbecue sauce
*Not a fan of mushrooms? Simply omit.

Often I will open two or three recipe books, mix and match and add what I like. So here's my way to share with you and keep track of the keepers. Feel free to change and add and subtract to what suits you.

Chicken Tortilla Soup (the recipe that started it all)
- 3 or 4 chicken breast halves
- 1 garlic glove, minced
- 2 Tbsp. butter
- 2 14 1/2 can chicken broth
- 2 14 1/2 cans diced tomatoes
- 1 small can Rotelle with lime and cilantro
- 1 Tbsp. dried cilantro or 1 bunch fresh
- 2 Tbsp. ground cumin
- 1 Jalapeno diced
- 4 tortilla shells, fajita size
Melt 2 Tbsp of butter in a large stock pot. Saute your garlic on low until slightly brown. Dice or shred your chicken and add to the pot. Add the rest of your ingredients, except tortilla shells, and bring to a boil. Lower the heat and let the soup simmer for 15-20 minutes.
Top each bowl with the tortilla shells, broken up. Cheese and sour cream is optional. Enjoy!
*Tips*
You can buy garlic preminced in a jar and jalapenos sliced in a jar to help save on time.
No Rotelle on hand? You can substitute with one cup of salsa.
Low sodium chicken broth will help make this a healthier dish.
Also, tortilla chips work just fine in replacing the baked tortilla shells.
